Aam Ka Achar

  • Raw mangoes (Green karry)
  • Turmeric powder
  • Vinegar
  • Zeera (Cumin seeds)
  • Red chilli flakes
  • Kalonji (Nigella seeds)
  • Sounf (Fennel seeds )
  • Sarsoo (Mustard seeds)
  • Methi Dana (Fenugreek seeds )
  • Ajwain (Carom seeds)
  • Sarsoo Ka Tail (Mustard oil)
  • Salt
  • 1 kilogram (sliced)
  • 2 tablespoons
  • 1 ½ cup
  • 2 tablespoons
  • 2 tablespoons
  • 1 tablespoons
  • 1 tablespoon
  • 1 tablespoon
  • 1 tablespoon
  • ½ teaspoon
  • 3 cups
  • 4 teaspoons


Method and Preparation of Achaar
  • Cut the raw mangoes into four pieces and put them in a bowl.
  • Add four teaspoons of salt and two tbs turmeric powder and mix them all properly.

  • Add vinegar into it with half cup of water.

  • You can cook them or to put on the sunlight directly, till the mangoes become tender and water dries up.

  • If you use sunlight, it takes several days to prepare but you cook them on heat then it takes hardly 20 to 25 minutes to prepare

  • Now put them out in a mixing bowl. In other pan take mustard oil, cumin seeds, nigella seeds, fennel seeds, mustard seeds, red chilli flakes,fenugreek seeds, carom seeds and cook for two to three minutes.

  • Now it is ready to mix all the above ingredients to the mangoes and mix properly.

  • After completion of this mixture, place it in cool place or wait until its temperature is cool down. 

  • For best result , pour into a large glass jar and place it on sunlight for 4 hours daily.
