Spiced Potatoes Recipe

INGREDIENTS

  • 60 grams of cashew nuts
  • 20 small new potatoes, peeled
  • 3 tbsp of vegetable oil
  • 200 grams of yogurt, lightly whisked
  • 1½ tsp of kashmiri chilli powder
  • 1 tsp of fennel powder
  • ½ tsp of cumin powder
  • 1 medium white onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 1 inches of ginger piece, finely chopped
  • 2 tbsp of tomato puree
  • 1 cup of water
  • ½ tsp of ground cardamom powder
  • 1 tsp of crushed dried fenugreek leaves (optional)
  • 1 tbsp of coriander leaves for garnish

METHOD

First, soak the cashew nuts in hot water for 15 minutes. Prick the new potatoes with a fork lightly for that action it cooks evenly. Heat onr tablespoon of vegetable oil in a wok or kadhai. Add the potatoes and fry for five minutes or until they turn crisp and golden brown. Drain on kitchen paper and set aside.
