- 300 grams long pasta
- 3 cloves of garlic, finely chopped
- an inch piece of ginger
- 200 grams mushrooms
- 1/4 cup of roasted peanuts, coarsely crushed
- 2 tablespoons of chinese chilli sauce
- juice from one lemon
- 1/4 cup of cream
- 1 tablespoon peanut butter
- 1 tablespoon of olive oil
- 1/2 cup Parmesan Reggiano Cheese
- chilli flakes to taste
- Salt to taste
To start making the Peanut and Ginger Pasta Recipe, we will first cook the pasta until it become soft then adding salt to the water in which the pasta is cooked well.
Once the pasta is cooked, run it under cold water and drain the excess water.
Drizzle one teaspoon olive oil and keep them aside.
In a small bowl mix together with the peanuts, chili sauce, cream, lemon and peanut butter. Keep aside too.
Then heat a teaspoon of olive oil in pan; add the garlic, ginger and mushrooms. Saute for a few minutes until the mushrooms soften.
Next add the peanut sauce mixture, including the pasta and stir well on low heat until the pasta is well coated with the peanut sauce. Check the salt and spices and adjust to suit your taste.
