Cauliflower Cheese Recipe


  • 1 large cauliflower (leaves cut off), broken into pieces

  • Half Kg milk

  • 4 tbsp flour

  • 50 grams butter

  • 100 grams strong cheddar, grated

  • 3 tbsp breadcrumbs

  1. Take a huge saucepan of water to the boil, then add the cauliflower and cook dinner for 5 minutes – lift out a piece to test, it need to be cooked. Drain the cauliflower, then tip into an ovenproof dish.
  2. Warmth oven to 220c/200c. Put the saucepan again on the warmth and add the milk, flour and butter.
  3. Keep whisking speedy because the butter melts and the combination comes to the boil – the flour will disappear and the sauce will start to thicken. Whisk for 2 mins at the same time as the sauce bubbles and will become excellent and thick.
  4. Flip off the heat, stir in maximum of the cheese and pour over the cauliflower. Scatter over the closing cheese and breadcrumbs.
  5. When the fowl comes out of the oven (see 'is going nicely with' recipe), pop in the cauliflower cheese and bake for 20 mins till bubbling
