Queen of Puddings Recipe


  • 2 Tbs--------------------- jam 
  • 3 egg-------------------- yolks 
  • 2 1/2 cups-------------- milk 
  • 1/4 cup ------------------caster sugar 
  • 2 drops------------------ vanilla essence 
  • grated rind of half -----a lemon 
  • 3 cups-------------------- fresh white breadcrumbs 


• 3/4 cup------------------ caster sugar 
• 3 egg --------------------whites 


  1. Location the egg whites, caster sugar, milk and vanilla essence in a bowl and whisk together. 
  2. Set microwave oven for 4 mins.
  3. Region the breadcrumbs and grated lemon rind in a greased shallow five cup microwave dish and stir inside the milk mixture.
  4. Microwave for five 1/2 minutes stirring each minute. Set apart. 
  5. Vicinity the jam in a small bowl and microwave for 1 minute.
  6. Lightly spread the jam over the cooked breadcrumb and milk mixture. 
  7. For the topping fold the sugar into the whisked egg whites.
  8. Spread the meringue over the jam and swirl into ornamental peaks. 
  9. Cook dinner the queen of puddings for three mins.
  10. Brown the pudding for some moments beneath a preheated traditional grill.
