INGREDIENTS
- 2 Tbs--------------------- jam
- 3 egg-------------------- yolks
- 2 1/2 cups-------------- milk
- 1/4 cup ------------------caster sugar
- 2 drops------------------ vanilla essence
- grated rind of half -----a lemon
- 3 cups-------------------- fresh white breadcrumbs
Topping
• 3/4 cup------------------ caster sugar
• 3 egg --------------------whites
DIRECTIONS |
- Location the egg whites, caster sugar, milk and vanilla essence in a bowl and whisk together.
- Set microwave oven for 4 mins.
- Region the breadcrumbs and grated lemon rind in a greased shallow five cup microwave dish and stir inside the milk mixture.
- Microwave for five 1/2 minutes stirring each minute. Set apart.
- Vicinity the jam in a small bowl and microwave for 1 minute.
- Lightly spread the jam over the cooked breadcrumb and milk mixture.
- For the topping fold the sugar into the whisked egg whites.
- Spread the meringue over the jam and swirl into ornamental peaks.
- Cook dinner the queen of puddings for three mins.
- Brown the pudding for some moments beneath a preheated traditional grill.
