- Preheat oven to 175 degrees c.
- Grease 9x5 inch loaf pan, or 3 3x5 inch loaf pans.
- Beat eggs - put sugar, eggnog, butter, rum and vanilla extract.
- Sift collectively in a bowl the flour, baking powder, salt and nutmeg then add to the batter.
- Stir simply to combine.
- Pour into greased pan and bake.
- For massive loaf pan bake for 40 to 50 mins and for small loaf pan 25 to 30 mins.
Bake until golden brown and toothpick inserted comes out clean. Now its ready to serve.
