Mirchi Korma - Recipe in Urdu

INGREDIENTS

  • 6 dried Kashmiri chiles
  • 2 small red Thai chiles
  • 1 Kilo lamb shoulder pieces
  • 1 tbsp. black peppercorns
  • 4 green cardamom pods
  • 1 stick cinnamon
  • ¼ cup canola oil
  • 1 tsp black cumin seeds
  • 10 cloves garlic (paste)
  • 2 bay leaves
  • 50 grams (Emli) tamarind paste
  • 3 tbsp dried mint
  • 1 tbsp. red chile powder
  • Salt as per taste

INSTRUCTIONS

Take a saucepan and heat over medium-high. Lightly toaste dried chiles in it for 1 to 2 minutes. Put into the food processor to grind. Add fresh chiles and a cup of water and make its puree until it forms smooth paste. Now return to pan and add lamb, peppercorns, cardamom, cinnamon, and three cups  of water,  boil them. Cook the further as heat to medium-low flame, covered the pan until lamb is become very tender, it takes about one hour. Draw the lamb mixture into a bowl.

Heat oil over medium flame. Put cumin seeds, garlic, and bay leaves until seeds pop and cook them well, it take 1 or 2 minutes. Add lamb mixture which we prepared before, the tamarind or Emli paste, one tablespoon, mint, the chile powder, and add some salt or according to taste, boil them well. Now turn the heat to medium-low flame about an hour or cook it until gravy becomes thickened. Here it is ready to serve. Garnish with mint or coriander leaves. Enjoy...!
